Shakshuka with Feta & Greens
Ingredients (Serves 2)
- 1 tbsp extra virgin olive oil
- 1/2 brown onion, finely diced
- 1 garlic clove, minced
- 1/2 red capsicum, thinly sliced
- 1 tsp sweet paprika
- 1/2 tsp ground cumin
- 1/4 tsp turmeric (optional – anti-inflammatory)
- 1 can (400g) organic diced tomatoes
- 1 handful baby spinach or chopped silverbeet
- 4 eggs (free-range or pasture-raised)
- 1/4 cup organic feta, crumbled (to top)
- Pinch of sea salt & cracked pepper
- Optional: fresh herbs (parsley or coriander) to serve
- Optional: sourdough, flatbread, or quinoa on the side
Method
- Preheat oven: To 180°C (350°F). Lightly grease two oven-safe ramekins or canisters.
- Sauté the aromatics: In a pan, heat olive oil. Sauté onion and capsicum until soft. Add garlic, paprika, cumin, and turmeric. Cook gently until fragrant.
- Build the tomato base: Stir in diced tomatoes and season with salt and pepper. Simmer for 5–7 mins until slightly thickened. Fold in spinach until just wilted.
- Assemble into canisters: Divide the tomato mixture between the two prepared ramekins or canisters. Use a spoon to create two small wells in each.
- Add the eggs: Crack 2 eggs into each ramekin, directly into the wells.
- Top with feta: Generously crumble feta over the top of each ramekin.
- Bake: Place ramekins on a tray and bake for 12–15 minutes, or until egg whites are set but yolks are still soft.
- Serve: Garnish with herbs if desired and serve with crusty bread, flatbread, or quinoa for a complete meal.
