Healthy Bolognaise

Ingredients (Serves 4–6)

  • 1 tbsp olive oil
  • 1 small brown onion, finely chopped
  • 2 garlic cloves, minced
  • 1 carrot, grated
  • 1 zucchini, grated
  • 1 stalk celery, finely diced
  • 500g organic (if possible) lean beef or lamb mince (or turkey/lentil blend).
  • 1 tbsp tomato paste
  • 1 tsp dried oregano
  • 1/2 tsp ground paprika (optional, adds warmth)
  • 2 can (400g) organic crushed tomatoes
  • 1/2 cup bone broth or water
  • Salt & pepper, to taste
  • Handful of baby spinach or kale (stirred in at the end)
  • Optional: splash of tamari or balsamic for depth
  • Optional: grated cheese or nutritional yeast to serve

 

Method

  1. Sauté the base: Heat olive oil in a large pan. Sauté onion, garlic, carrot, celery, and zucchini over medium heat until soft and fragrant (5–7 mins).
  2. Add the meat: Add mince and cook until browned, breaking it up with a spoon as you go.
  3. Stir in flavour: Add tomato paste, oregano, paprika, salt, and pepper. Stir well to coat.
  4. Simmer: Pour in crushed tomatoes and broth. Bring to a gentle simmer, cover, and cook for a minimum of 30minutes, the longer you leave this simmer the richer the flavour. We leave ours for hours where time permits. Stir occasionally.

 


Stir through baby spinach or kale until wilted. Adjust seasoning to taste. Serve over pasta, rice, or zucchini noodles.
